Supply and Demand: The Raw Bar Ottawa Fights Over

The hardest reservation in Ottawa’s west end isn’t a hotel penthouse — it’s a seat at the raw bar of Supply and Demand. The Wellington West room, on the border where Westboro meets Hintonburg, hums nightly with oyster shells, extruded-that-morning pasta and the kind of convivial noise that only happens when everyone in the room knows they got lucky with the booking.

The Concept

Chef Steve Wall and his wife Jennifer opened Supply and Demand in early 2013, and the food world noticed fast: enRoute magazine placed it among Canada’s best new restaurants that first year, and the Canada’s 100 Best list has kept it in national conversation since. The premise never changed — seafood and handmade pasta, a raw bar that’s always full, and a short seasonal menu with zero filler.

What to Order

Oysters first, always. Then the squid ink rigatoni — the dish that built the cult — or the butternut squash ravioli, the shrimp toast with whipped roe, house-made sausage and whatever fish the day delivered. Even the kale salad has its own fan club. The menu shifts with the seasons and sells out of favourites without apology.

The Space

Cozy verging on boisterous: a warm, modern, close-quarters room where the open kitchen and raw bar set the tempo and neighbouring tables become part of the evening. Polished without stiffness — the noise is the sound of a restaurant winning.
