The Wellington West room, on the border where Westboro meets Hintonburg, hums nightly with oyster shells, extruded-that-morning pasta and the kind of convivial noise that only happens when everyone in the room knows they got lucky with the booking.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"The_Concept\"><\/span>The Concept<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Chef Steve Wall and his wife Jennifer opened Supply and Demand in early 2013, and the food world noticed fast: enRoute magazine placed it among Canada&#8217;s best new restaurants that first year, and the Canada&#8217;s 100 Best list has kept it in national conversation since. The premise never changed \u2014 seafood and handmade pasta, a raw bar that&#8217;s always full, and a short seasonal menu with zero filler.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"What_to_Order\"><\/span>What to Order<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Oysters first, always. Then the squid ink rigatoni \u2014 the dish that built the cult \u2014 or the butternut squash ravioli, the shrimp toast with whipped roe, house-made sausage and whatever fish the day delivered. Even the kale salad has its own fan club.
